  • Cauliflower & Ranch VeggieMash™
  • Grilled or sautéed Chicken Breast
  • Green Bell Peppers
  • Red Bell Peppers
  • Red Onions
  • Olive Oil
  • Salt & Pepper, to taste


  1. Grill or Sauté chicken breast. Cut into thin slices, going against the grain.
  2. Sauté Red Bell Peppers, Green Bell Peppers and Red Onion in 1/4 cup olive oil
  3. While vegetables are cooking, prepare VeggieMash™ according to instructions on the package.
  4. When onions are translucent, add salt and pepper to taste.
  5. Serve VeggieMash™ into separate bowls, and top with chicken and veggies.
