  • 1 cup (2 servings) Idaho® Spuds™ Classic Flakes
  • 1-1/2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 3 eggs
  • 1 cup sour cream
  • 1 cup milk
  • 1/4 cup butter, melted
  • Whipped Cream
  • Garnishes (optional) – Shredded Cheddar cheese, Snipped chives

Maple Apple Topping

  • 2 tart apples
  • 1 tablespoon butter
  • 1 cup maple syrup


  1. Heat waffle iron.
  2. Prepare potatoes per package directions. Let cool. (Or use leftover mashed potatoes).
  3. Combine flour, sugar, baking powder and cinnamon in a small bowl.
  4. Stir potatoes, egg yolks and sour cream in a large bowl. Stir in milk and butter. Thoroughly mix in dry ingredients.
  5. Beat egg whites to stiff peaks. Gently fold into batter.
  6. Spoon 1/2 to 2/3 cup batter (or enough to fill) into preheated waffle iron.
    Bake until golden brown. Repeat with remaining batter.
  7. Serve warm with maple apple topping and whipped cream if desired

Maple Apple Topping

Dice two tart apples. Cook apples with 1 tablespoon butter in a skillet over medium-high heat, stirring occasionally until golden brown, about 4 minutes. Stir in 1 cup maple syrup. Serve warm with waffles.
