Grilled BBQ Tofu Skewers with Honey-Butter Mashed Potatoes Print

Go vegetarian but don’t forgo the barbecue! Tofu grills well with vegetables, just be sure to cut the pieces in similar sizes for even grilling. A few tablespoons of honey in mashed potatoes adds a surprising twist for a delicious complement to the skewers.

Ingredients

Skewers

  • 1-1/2 pkgs (14 oz each) extra firm tofu, cut in 1 inch cubes
  • 1 red onion, cut in 1 inch pieces
  • 3 large bell peppers, assorted colors, cut in 1 inch pieces
  • 12 cherry tomatoes
  • 3/4 cup spicy barbecue sauce
  • 12 bamboo skewers, soaked in water

Honey-Butter-Mashed Potatoes

  • 2 2/3 cups water
  • 4 tablespoons margarine or butter
  • 4 tablespoons margarine or butter
  • 1 teaspoon salt
  • 3 tablespoons honey
  • 2/3 cup milk
  • 2 2/3 cups Idaho® Spuds™ Classic Flakes

Prep

  1. Heat and oil grill.
  2. Arrange tofu, onion and peppers onto skewers evenly and brush lightly with barbecue sauce.
  3. Grill skewers until vegetables are tender-crisp and grill marked on one side, about 4 minutes. Turn carefully with a spatula. Brush with additional barbecue sauce and grill about 4 minutes longer.
  4. Serve with Honey-Butter Mashed Potatoes.
  5. Honey-Butter Mashed Potatoes:
    Heat water, margarine or butter, salt and honey to boiling in a medium saucepan.
  6. Remove from heat.
  7. Stir in milk and potato flakes with a fork until mixture is just combined, about 15 seconds. Let stand 1 minute.
  8. Fluff with fork before serving.
